Native American legend has it that maple syrup and maple sugar were being consumed before recorded history. Native Americans initially consumed the maple water/sap as a source of energy and nutrients. Maaple Sugar was the sweetener of choice until the early 1900's when cane sugar became more readily available and much cheaper, especially given that it takes 40 gallons of maple water to make 1 gallon of maple syrup.
